Ingredients
2 T. olive oil
3 cloves of garlic
1 pound of ground buffalo meat
1 box organic beef stock soup
1 package organic spinach
1 can Tuscan white beans or white kidney beads
1 to 2 bay leaves
Salt and pepper to taste (or add a splash of Tabasco or hot sauce for a better taste)
Directions
Heat oil in pan.
Chop and saute garlic.
Roll buffalo meat into meat balls and brown.
Add box of beef broth, bag of spinach, and can of beans.
Stir and add bay leaves. Add salt and hot sauce or pepper to taste.
Bring to a boil for 5 minutes then simmer for 20 to 30 minutes.
Serve with grain bread or over cooked rice.
Save some for tomorrow…this soup reheats to an even better taste!
